HOMEMADE PIZZA SAUCE!
1/2 can chickpeas (minced)
2 cloves garlic (minced)
1/2 bushel fresh Italian parsley (minced)
1 tsp crushed red pepper
1 Tbsp olive oil
2 tsp Italian spice blend
1 can Hunt’s Basil/Oregano Diced Tomatoes (low sodium, if possible)
Sauté the oil, garlic, and chickpeas about 5 mins stirring occasionally. Throw in the minced parsley and stir occasionally for about 3 minutes more.
Add in crushed tomatoes, Italian spice, crushed red pepper. Stir. Simmer on medium about 15 mins, stirring occasionally.
Great on pizza, pasta, or as a dipping sauce! Throw some leftover chickpeas on top of the pizza, too! Heavenly!
