CHICKPEA SALAD–You are what you eat, right?!
What you need:
1 bag salad mix (I used iceberg, but mixed would be yummy, too)
1/2 cup chopped carrots
1/2 cup chopped cucumbers
1/2 cup chopped red peppers
1/2 cup cold sweet peas
1/2 cup black beans, rinsed
1/2 cup garbanzo beans, rinsed
1/2 cup spicy peanuts
1/3 cup sesame seeds
8 cherry tomatoes
1/3 cup garlic balsamic dressing
1/3 cups mozzarella cheese to garnish
Toss as you like! Makes about 2 large salads. Delicious!!
